Strawberry Angel Food Pie

Recipe is Courtesy of Cindy and Friend in Houston, Texas

One Large Angel Food Cake
1 1/2 cups boiling water
3 oz Package Strawberry Jello (wild strawberry is good)
One Small Box Frozen sliced Strawberrys (thawed)
12 oz Cool Whip Break

Break the angel food cake into pieces about 1" by 1" or so and drop into a 9" pie pan. Boil 1 1/2 cups water. Stir in Jello Mix. When disolved, add thawed strawberries with liquid. Carefully pour over broken Angel Food using a measuring cup or large spool. Chill. Cover with Cool Whip. It's perfect on a hot summer day.

Strawberry Muffins Recipe

2 1/2 cup flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cup buttermilk
1/3 cup melted butter
2 eggs, slightly beaten
1 teaspoon vanilla
1 pint fresh strawberries, hulled and chopped
Additional sugar for topping

Firm fresh strawberries work best in this recipe, but when the season is over substitute blueberries, cherries or chopped peaches.

Pre heat oven to 400°F. Spray muffin tin with nonstick cooking spray or line muffin cups with paper cupcake liners. In a large bowl combine flour, sugar, baking powder, baking soda and salt, stir well until all ingredient are well blended.

In another bowl, whisk together the buttermilk, butter, eggs and vanilla. Make a well in the middle of the dry ingredients and pour liquid mixture in and the strawberries. Using a large spoon, gently fold ingredients just until moist do not overmix. Spoon the batter evenly into 12 muffin cups. Sprinkle each muffin with about 1/2 teaspoon sugar, if desired. Bake 20 to 25 minutes. Makes 12 muffins.

Strawberry Spinach Salad

1 pint fresh strawberries
2 bunches fresh spinach
1/2 cup sugar
1 1/2 tablespoons minced green onion
1/2 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1/2 cup olive oil
1/2 cup balsamic or cider vinegar
2 tablespoons sesame seeds

Wash strawberries under cool running water. Remove caps and set aside to drain. Wash spinach and remove large tough stems. Tear large leaves into small pieces. Drain.

Dressing Recipe: In a medium bowl combine remaining ingredients and whisk together. Slice strawberries into halves or quarters and place in a large bowl. Add dry spinach. Pour dressing over all and toss.

Strawberry Pie Recipe

1 baked pie crust
3 oz. pkge of strawberry flavor Jello
1/2 cup granulated sugar
1 1/2 cup boiling water
2 tblsp lemon juice
1 pint of fresh strawberries
whipped topping

Mix jello powder with the sugar. Add boiling water and stir until thoroughly dissolved. Add the lemon juice.

Refrigerate until mixture starts to gel. Arrange strawberries on crust. Spoon thickened jelly over the berries and refrigerate.

Serve with whipped topping.

Strawberry Cheesecake

Prepare graham cracker pie crust
1 8oz pkg cream cheese
1 can of sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla
2 cups sliced fresh strawberries

In a medium bowl, beat the cream cheese until light and fluffy. Gradually blend in the sweetened condensed milk, then add the lemon juice and the vanilla. Pour the mixture into the prepared pie crust. Chill for 2 hours. Top with the strawberries.
Recipe Tip: Drizzle the berries with the warmed honey.

Chocolate Dipped Strawberries

2 large chocolate bars (try Hershey's)
12 large fresh strawberries, stems on

Leave the stems on your berries. Wash and dry well. Break chocolate into pieces and place in microwave safe bowl. Heat in microwave oven on high for 30 seconds.

Holding by stems, dip each strawberry. Place on wax paper to cool.

Note: It is essential to the recipe that the berries have been dried of the wash water.

Strawberry Shortcake

2 cups flour
1/2 tsp salt
1 tbsp baking powder
2 tbsp sugar
4 tbsp cold butter
3/4 cup milk
1 cup whipped topping
1 cup sour cream
2 tbsp golden brown sugar
3 cups sliced strawberries

Preheat oven to 425°. Combine the first 5 ingredients together in medium bowl. Mix well. Add butter and combine until mixture looks like bits the size of large peas. Add milk, mixing in with fork. Use your hands to make dough ball. The dough should remain soft. Place dough on floured surface and gently press into a flat circle, about 7-8inches around. Use a sharp knife and cut into 8 wedges. Place the wedges onto an ungreased cookie sheet. Bake 10 minutes or until nicely golden brown. Cool on a rack.

Beat golden sugar into the sour cream. Beat whipping cream until stiff and then combine with sour cream mixture. Slice open the cooled shortcake wedges. Dollop the cream mixture onto the bottoms until you have used about 80 % of the mixture - it will overflow.

Top with lots of sliced strawberries. Reserve a few berries for decorating the tops. Place the shortcake tops on each wedge. Place a small dollop and strawberry on top of each. Recipe serves 8.

Strawberry Foam Recipe

1/2 cup butter
1/2 cup honey
1 egg white, beaten stiff
2 cups fresh strawberries, crushed
4 or 5 fresh whole strawberries

Cream butter thoroughly. Add honey slowly. Fold in egg white, then strawberries. Serve immediately. Great as sauce over pound cake slices. Garnish with the whole berries.

Strawberries & Yogurt Sauce

1 cup low-fat vanilla yogurt
1 tbsp liquid honey
1/2 oz fresh mint, chopped
1/4 tsp lemon peel, zested
Fresh whole strawberries

This treat can be prepared ahead of time and served when you are ready. Combine all ingredients except the strawberries. Refrigerate until you are ready. Use small bowls for dipping.

Excellent light dessert recipe.

Low Fat Strawberry Shake

Recipe makes 2 servings
1/2 ripe banana
1 cup fresh strawberries
1 cup skim milk
1/2 tsp vanilla
1/2 cup ice chips or small cubes

Place all ingredients into blender bowl. Blend at high speed. Pour into 2 large glasses and pop in the straws.
