Easy Old Fashioned
Apple Sauce
Yield Recipe: 4 Servings
3 TB butter
6 Macintosh apples, cored, peeled and chopped
1/4 c sugar
1 ts cinnamon
1/2 ts nutmeg
4 TB water
Combine all ingredients in a saucepan and cook over medium heat until apples
become very tender, about 30 minutes. Applesauce may be left lumpy or pureed
with a handblender to become smoother.
Recipe for Applesauce 'n' Spice Bread
2 c All purpose flour
1 ts Baking soda
1/2 ts Baking powder
1/4 ts Salt
1/2 ts Cinnamon
1/2 ts Nutmeg
1/4 ts Allspice
1 c Sugar
1/2 c Veg oil
1 1/4 c Applesauce
2 Eggs
3 tb Milk
1/2 c Chpd pecans
TOPPING
1/4 c Chpd pecans
1/4 c Brown sugar
1/2 ts Cinnamon
Preheat oven 350F. Sift flour, baking soda, baking powder, salt, and spices
together. In lg bowl combine sugar, oil, applesauce, eggs, and milk. Stir the
dry ingreds into apple sacue mixture; stir in the 1/2c pecans. Pour into
greased 9x5" loaf pan. Mix topping ingreds thoroughly and sprinkle over
batter. Bake 1-1 1/4 hrs or until pick inserted comes out clean. Cool in pan.
Applesauce Spice Cake
3 c Water, divided
1 1/4 c Raisins
2 1/2 c Unsweetened apple sauce
3 Eggs, beaten
1 1/2 cups sugar
1 c Vegetable oil
3 c Self-rising flour
3 tb Ground cinnamon
1/4 ts Baking soda
2 tb Vanilla extract
Vegetable cooking spray
Preheat oven to 350F. Combine 2 1/2 cups water and raisins in a small Dutch
oven; bring to a boil. Boil until water evaporates or is absorbed by raisins.
Remove from heat. Add applesauce, eggs, sugar substitute, oil, and remaining
1/2 cup water. Stir until well combined.
Sift together flour, cinnamon, and soda; gradually add to applesauce mixture
with vanilla, stirring after each addition. Spoon batter into a 10-inch Bundt
pan coated with spray. Bake at 350F for 40 to 45 minutes or until a wooden pick
inserted in center comes out clean. Cool in pan 10 minutes; remove from pan,
and cool on a wire rack.
