Almond Mushroom Pate

Yield: 6 Servings
2 tb Margarine
1 x Sm Onion, chopped (1/4 c)
1 x Clove garlic, minced
1 1/2 c Sliced Mushrooms (4 oz)
1/2 ts Tarragon
1 c Blanched Whole Almonds(6 oz)
1 tb Lemon juice
2 ts Soy Sauce
1 ds White Pepper
2 tb Cream Cheese, opt. * * or kefir cheese, or Neufchatel cheese
GARNISH:
slivered or finely chopped almonds,
fresh parsley sprigs,
pimiento strips, or sweet red pepper strips, optional
In a large skillet, melt margarine. Add onion, garlic, and mushrooms. Saute
until tender but not browned. Add tarragon, stir until it is softened. Pour
mixture into a bowl of food processor. Add remaining ingredients. Process until
mixture is smooth. Add cheese if you prefer a more spreadable consistency.
Spoon into a serving bowl. Top with garnish of your choice. Serve with water
crackers, thick slices of crusty French bread, thin slices of whole wheat
bread, or unsalted whole wheat crackers. May be frozen. Makes 1 1/2 cups.
Antipasto Appetizer Spread

Yield: 7 Cups
2 x 4-oz cans mushroom stems and -pieces, drained and finely -chopped
1 14-oz can artichoke hearts, -drained and finely chopped
1 10-oz jar pimiento-stuffed -olives, drained and finely -chopped
1 6-oz can ripe olives, -drained and finely chopped
1/4 c Chopped green pepper
1/2 c Chopped celery
3/4 c Vinegar
3/4 c Olive oil
1/4 c Instant minced onion
2 1/2 ts Italian seasoning
1 ts Onion salt
1 ts Salt
1 ts Seasoned salt
1 ts Garlic salt
1 ts Sugar
1 ts Cracked black pepper
Combine first 6 ingredients, mixing well; set aside. Combine remaining
ingredients in a saucepan; bring to a boil. Pour dressing over vegetables;
place in a large jar with a tight-fitting lid. Shake jar to stir ingredients;
refrigerate overnight. Serve spread with assorted crackers.

Cheese Ball

Yield: 1 Ball
4 oz Softened Cream Cheese
2 c Grated Chedder Cheese
1 tb Grated Onion
1 tb Milk
1 tb Worcestershire Sauce
2 tb Minced Seeded Jalapeno Pepper
2 tb Minced Seeded Red Bell Pepper
2 tb Minced Pepperoni
1 tb Chili Powder
Allow cheeses to warm to room temperature. Mix cheeses, milk, onion, and
Worcestershire sauce with electric mixer. Add peppers and pepperoni and gently
mix. Wrap mixture in plastic rap and refrigerate until firm. While still in
plastic rap, form in to ball shape, unrap and roll in chili powder. Serve with
your favorite crackers.

for Blue Cheese Ball

8 oz Cream Cheese; Room Temp.
4 oz Blue Cheese, Crumbled
4 oz Cheddar Cheese; Shredded
2 ts Mustard; Dijon-style
1 ts Worcestershire Sauce
1/8 ts Garlic Powder
1/4 ts Salt
1/2 c Pecans; Finely Chopped
2/3 c Currants
3/4 c Parsley; Chopped

Apple Wedges
Place the cream cheese, blue cheese, cheddar cheese, mustard,
Worcestershire, garlic powder, and salt in a mixer bowl and beat at low speed
just until well mixed. Stir in the pecans and currants. Taste and adjust
seasoning. Refrigerate the cheese mixture for 30 minutes or until slightly
firm, then shape into a ball.
Roll in the chopped parsley to coat well. Cover with plastic wrap and
refrigerate until ready to serve. Let stand at room temperature for about 30
minutes before serving. Place on a platter surrounded with crackers and apple
wedget.
Bacon-Wrapped Mushrooms

Yield: 12 Servings
1 lb Bacon
1 lb Fresh mushrooms, washed

1. Cut the mushrooms in half. If it is a very small mushroom, leave it
whole. If it is an oversized mushroom, cut into thirds or fourths.
2. Slice bacon in half (width-wise) at an angle. To do this, hold the knife
perpendicular to the bacon, then turn the knife slightly so that the knife is
now at an angle, then slice the bacon.
3. Take a slice of bacon and wrap it around a mushroom half, overlap the ends,
and poke a toothpick about half-way into the mushroom at the overlap.
4. Repeat this for each bacon slice and mushroom half.
5. Preheat oven to 350 degrees.
6. Arrange mushrooms on a drip pan about 1/2-inch apart. Bake for 20 minutes.
Serve hot.

for Chili Cheese Puffs

1 c Flour
1 ts Chile powder
1/2 c Grated cheddar cheese
1/2 ts Salt
1/2 c Butter
Measure dry ingredients into mixing bowl. Work butter and cheese into flour
mixture with fingers. Shape in marble size and placed on ungreased sheet. Bake
19 min at 425 F. Do not over bake.
Continental Mushroom Caviar

Yield: 6 Servings
1 sm Onion, sliced and minced
2 tb Olive oil
1/2 lb Mushrooms, chopped fine
Salt and pepper
1 tb Lemon juice
Wild chives, chopped
1 tb Sour cream
Fry the onion in the oil until soft and limp. Add mushrooms and cook until
just barely soft. Add seasoning and other ingredients. Chill well before
serving time. This is nice served with thin tomato slices or spread on
crackers.

Pepper Salsa Recipe

14 1/2 oz Italian plum tomatoes, drain
1 Med. onion, thinly sliced
1/2 c Coarsely chopped celery
1 cn 4 oz Green chilies, drained
1/3 c Chopped red bell pepper
1/3 c Chopped yellow bell pepper
1/3 c Chopped Green bell pepper
1/4 c Olive oil
2 tb Red wine vinegar
1 ts Mustard seeds
1 ts Ground coriander
1 ts Salt
1 ts Pepper
1/4 c Chopped fresh cilantro
Tortilla chips
Combine first 13 ingredients in a processor. Finely chop using on/off
turns. Transfer to bowl. Cover and chill at least 4 hours. Can be made two days
ahead. Mix cilantro into salsa. Serve with chips.
Guacamole Appetizer Recipe

1 Avocado, medium, seeded, peeled, and coarsely mashed
1 tb Lemon juice
1 Garlic, clove, minced
1 Tomato, small, chopped
1 Onion, green, chopped
1/4 Pepper, bell, minced
1/2 ts Pepper, chili, chopped
1/2 ts Chili powder
1 tb Cilantro, fresh, minced
Blend avocado, lemon juice, garlic, tomato, onion, bell pepper, chile
pepper, chili powder, cilantro and pepper. Use guacamole to top tacos or serve
with broiler-crisped tortilla chips.

Cheese Dip

Yield: 8 Servings
7 oz Can minced clams, drained
1/4 c Green pepper, finely chopped
4 Scallions, finely chopped
2 dr Tabasco sauce
10 oz Sharp cheese spread
Garlic salt, to taste.
Combine all ingredients in a deep, 1 1/2-quart, heat- resistant,
non-metallic casserole. Heat, uncovered, in Microwave Oven 5 minutes or until
cheese melts. Stir at the end of each minute. Serve very hot with crisp corn
chips for dipping. Makes 1 1/2 cups.
Texas
Style Jalepeno Cheese Dip

1 pt Mayonnaise
1 lb Processed Cheese (Velveeta)
1 Med or Large Onion
5 ea Green Pickled Jalapeno Peppers
For variety, pickled carrots can be substituted for Jalapenos.
Use blender to liquify jalapenos, then onion and cheese, cut in 1-inch
cubes. When well blended, mix in bowl with mayonnaise. Dip will stay for 2
weeks in refrigerator. For different effects, aditional carrots and/or
jalapenos can be finely diced and added to the dip. Dip increases in jalapeno
strength with age.

1/2 c Margarine
1/4 c Salad oil
1/4 c Bacon fat
1/2 c Worcestershire sauce
2 ts Garlic salt
4 ts Celery salt
4 c Unblanched almonds (or mixed -nuts)
4 c Wheat chex or other small -shredded wheat squares
4 c Rice chex
2 c Cheerios
2 c Thin pretzels
1 8-10 oz package cheese -flings or similar cracker -snack
Melt the margarine, oil, and bacon fat. Stir in worcestershire sauce. Add
salts. Remove from heat and let stand a few minutes. In large roasting pan
combine nuts, cereals, pretzels, and cheese snack crackers. Pour sauce over
this and toss to blend. Bake uncovered in slow oven (200F) for 2 hours,
stirring every 30 minutes. Makes 5 quarts.

About Cheese

Yield: 6 Servings
2 c Pecans or walnuts (about 1/2 -lb)
4 oz Cream cheese
4 oz Stilton or Danish blue -cheese
1 tb Mayonnaise
1/2 ts Worcestershire sauce
Any flavored cream cheese (pepper or orange) can be used instead of
themixture of Stilton, cream cheese, mayo and worcesershire sauce. To add
variety, serve a couple of flavor combinations, such as Stilton and garlic-herb
cheese. Toast nuts on baking sheet in 350 F oven for 8-10 minutes or until
fragrant. Let cool completely.
In food processor or by hand, combine cream cheese, stilton, mayonnaise and
worcestershire sauce until blended. Refrigerate until firm. Sandwich about 1/2
tsp cheese mixture between 2 nut halves. Refrigerate until serving.
