Marinade & Barbecue Sauce for Beef
MARINADE
1 c Red wine vinegar
1/4 c Water
2 ts Ground cumin
3 Garlic cloves, minced
2 ts Achiote paste
1 ts Crushed red pepper
Salt and black pepper, to -taste
1/4 c Olive oil
BARBECUE SAUCE
1 Dried pasilla chile
1 c Boiling water
2 tb Achiote paste
1 tb Olive oil
3/4 c Of the marinade
Marinade: Combine marinade ingredients. Makes enough for 2 pounds of beef.
To use: Toss paper-thin slices (1 inch by 3 to 4 inches) of beef sirloin with
the marinade in a nonmetallic bowl. Refrigerate 6 to 8 hours or overnight.
Drain meat, reserving 3/4 cup of the marinade. Thread meat on bamboo skewers.
Sauce: Remove and discard seeds from pasilla chile. Coarsely chop chile and
cover with boiling water. Soak for 20 to 30 minutes. Drain, and put in a food
processor with achiote paste and olive oil. Puree. Add the 3/4 cup marinade and
blend until smooth.
To use: Brush on skewers of meat. Broil or grill on barbecue until meat is
done, about 5 minutes, basting with marinade several times. Brush again before
serving.
Alfredos Barbecue Fish Marinade
Recipe
1 c Soy sauce
1 c Lime juice
1 c Vinegar
1 c Oil
2 ts Pepper
2 ts Salt
1 ts Garlic powder
1 ts Lawrys season salt
1/4 c Sesame seeds
1 Clove garlic -- minced
Marinate fish for at least one hour before cooking. Serves 30.

For All-Time Favorite Barbecue Sauce
1 c Condensed Tomato Soup
1/4 c Vinegar
1/4 c Vegetable oil
2 tb Packed brown sugar
1 tb Worcestershire sauce
1 ts Garlic powder
1/8 ts Louisiana-style hot sauce -(optional)
In small bowl, combine soup, vinegar, oil, brown sugar, Worchestershire
sauce, garlic powder and hot sauce; set aside. Use this bbq sauce to baste
ribs, chicken, hamburgers or steak during broiling or grilling. Makes about 1
1/3 cups sauce.

For Zesty Barbecue Sauce W/ Honey
2 tb Olive Oil
1 1/2 c Onions, finely chopped
2 tb Garlic, finely chopped
1 cn Tomatoes, crushed, 28 oz
1 cn Tomato Paste, 6 oz
1/2 c Red Wine Vinegar
1/4 c Worcestershire Sauce
1 tb Chili Powder
1 tb Coriander, ground
3 tb Lemon Juice
1/4 ts Red Pepper Flakes
1 tb Tabasco Sauce
2 tb Oregano fresh or 1 tb dried
2 ts Cumin, ground
2 Bay Leaves
4 Thyme sprig fresh or 1 ts -dry
1 ts Black Pepper, freshly ground
4 tb Honey
1 ts Salt
Heat the oil in a saucepan and add the onions. Cook, stirring until wilted.
Add the garlic, cook briefly and add the remaining ingredients.
Bring sauce to a simmer and cook, stirring often, about 30 minutes. Let the
sauce recipe cool and use for basting. Refrigerates well. Makes 5 cups.

Basting Sauce Recipe for Barbecue
1/2 c Margarine or Butter
1/2 c Bacon drippings
3 tb Lemon juice
1 tb Worcestershire Sauce
1 ts Salt
1 ts Pepper
2 ts Chili Powder
2 c Water
Butter is preferred in this dish for flavor, but you may prefer margarine.
In a saucepan, combine margarine, bacon drippings, lemon juice and
Worcestershire Sauce. Cook over low heat until butter margarine melts. Dissolve
Chili Powder, Salt, Pepper and Garlic Powder in water and add to margarine
mixture. Bring barbecue sauce to a boil.
Lower heat and simmer for 15 minutes. Makes 3 1/2 cups. Will serve to baste 5
lbs. brisket.
Black
Jack Sauce Recipe
1 c Strong black coffee
1 c Worcestershire sauce
1 c Catsup
1/2 c Cider vinegar
1/2 c Brown sugar
3 tb Chili powder
2 ts Salt
2 c Chopped onions
1/4 c Minced hot chili peppers
6 Cloves garlic - minced
Combine all recipe ingredients in a saucepan and simmer 25 minutes. Strain
or puree in a blender or food processor. Refrigerate between uses. Makes 5 cups
of great sauce for your barbecue.
Recipe
For Coca-Cola Barbecue Sauce
2 tb Unsalted butter
1 ea Onion, finely chopped
2 ea Garlic cloves, minced
1 ea Bay leaf, crumbled
2 c Ketchup
3/4 c Coca Cola
1 tb Worcestershire sauce
1 ts Dijon mustard
2 ts Wine vinegar
1 x Salt and pepper to taste
Melt butter in medium saucepan over medium-low heat. Add onions and cook 1
minute. Add garlic and cook 4 minutes longer. Do not brown.
Stir in coca cola and remaining ingredients. Heat to barbecue sauce to boiling;
reduce heat and simmer, uncovered, stirring occasionally, 1 hour. Brush on
chicken during final 10 to 15 minutes of grilling. Makes 1 1/2 cups.
Fiery-Sweet Barbecue
Sauce
10 1/4 oz orange marmelade
1 c catsup
1/4 c cider vinegar
1 tb soya sauce
3/4 ts celery seed
1/2 ts ground red pepper
Combine all recipe ingredients in a 1 quart glass measuring bowl. Stir until
well mixed. Microwave on high for 5 - 7 minutes; stir after 3 minutes. When
mixture boils it is done. Exellent barbecue sauce with beef, pork, chicken.
